This Halloween, start the spooky factor early with these fun, healthy meal ideas. Serve these to the kids before they go trick-or-treating... and they may just skip the sweets (or not eat the candy as much!)
1.Stuffed Jack-O-Lantern Bell Peppers
Bell peppers are so easy to carve. Find some orange ones, slice off the tops, scoop out the inside, have fun with the carving, and you’ll have the cutest jack-o-lantern bowls. Fill the inside with Veestro’s mushroom risotto. Top off with the kale, and garnish with the heirloom carrots.
2. Soup in a Pumpkin
Clean out the inside of a small or medium sized pumpkin and use it instead of a bowl to serve Veestro’s tomato lentil soup. For even more deliciousness, roast the pumpkin at 400 degrees for 20 – 30 minutes.
